Robert Rodriquez demonstrates to cook puerco pibil. This is the slow cooked pork dish Johnny Depp’s character eats in “Once Upon a Time in Mexico”. The DVD includes a 10 minute bonus cut of Rodriguez teaching how to make puerco pibil in his own kitchen .
Puerco Pibil (with chicken)
5 tblspn annatto seeds
2 tsp cumin seed
1 tblspn whole black pepper
8 whole allspice
1/2 tsp cloves
grind all of the spices in a coffee grind
2 fresh habanero peppers, chopped (handle with care!)
1/2 cup orange juice
1/2 cup white vinegar
2 tblspn salt
8 clovesgarlic
blend everything above
juice of 5 lemons
splash of tequilla
5 tblspn annatto seeds

1/2 tsp cloves
grind all of the spices in a coffee grind

1/2 cup white vinegar

8 cloves
blend everything above
juice of 5 lemons
splash of tequilla
5 lbs chicken (or turkey)
Slow roast in a covered dish or pan for 4 hours at 325°
