BBQ Walnut Burger

BBQ Walnut Burger

What you need: 
1 pound of crushed or halfed walnuts
1 (4-ounce) bag of Uncle Ben's Boil in a Bag rice or 4 cups cooked rice
1 tablespoon EnerG brand egg replacer mix
4 tablespoons plain non-dairy milk (I use soymilk)
2 tablespoons vegetable oil
1/2 teaspoon seasoning salt (I use Johnny's)
1 cup flour + extra for dredging
BBQ sauce, to taste
vegatable oil, for frying

What you do: 
1. In a medium pot, boil rice for 5 minutes. To soften, add walnuts and boil for another 5 minutes (total boiling time for rice 10 minutes). In a medium bowl, thoroughly mix together egg replacer mix and non-dairy milk. After rice and walnuts are done cooking drain water. Cut open rice bag and add to bowl.
2. Add walnuts to blender. Grind walnuts until shredded into little pieces. (Do this a little at a time unless you have a food processor.) Add to bowl and mix egg replacer mix, non-dairy milk, rice, and ground walnuts.
3. Add vegetable oil and seasoning salt. Mix well. Add flour and stir to combine.
4. Get a large plate and lightly flour the surface. Form 6 to 8 patties. In batches, put patties on plate and lightly flour again. (This prevents sticking.) Put plate of patties in freezer for at least an hour. (I don't know why but you have to freeze it or the patties fall apart when cooking)
5. Cooking a. On the grill: Make sure to oil the grill because the patties will burn and/or stick to it if you don't. I suggest not to cook above the flame. While cooking spread BBQ sauce on patties. Add your favorite toppings to burger buns. (I like onions, tomatoes, sliced soy cheese, and lettuce) b. In the pan: Oil pan well and fry patties until crispy. I would particularly cover with a lid.
Source of recipe: A local restaurant had a good recipe for it until I found out it was fried in pork fat. Upset they didn't disclose this at first I decided to make one a million times better. Been obsessed with veganizing the recipe.
